options not available on screen

 Under "Define vehicle parameters" the only option I'm permitted to access is Configure lighting. All the others are greyed out and can be accessed when turning the centre knob.

Any ideas?

 You need Lexia or similar. Sometimes things can only be changed from there, sometimes user options need to be enabled from Lexia.

 In a similar vein, when I try to change the language it says to insert the CD. Is this a dealer-only CD? I can't find them available on the 'net.

 This is the CD with the "operating system" for (re-)installation. It has a spare part number, not expensive.
It is also included with the map upgrade packages. I recommend the original, it is better adapted to C6.
